内容記述 | Mongolian nomads are known to rely heavily on dairy products and meat from their livestock for much of their dietary intake. Each household produces a wide variety of dairy products on their own. Although their processing methods have been reported mainly from Japan, little is known about what and how much they eat. The purpose of this pilot study to investigate the dietary intake of Mongolian nomads was to examine the portion sizes of dried cheese they produce. The dried cheese was manufactured by Mongolian nomads living near Ulaanbaatar and purchased at the Sarol market, and sampled at a total of 13 locations. Each sampled dried cheese was weighed and the mean, standard deviation, and coefficient of variation were calculated for each sampling location. Eight of the 13 locations had portion sizes of 20 g or less. The coefficient of variation was 0.29~0.4, indicating that each Mongolian nomadic household produced dried cheese with similar accuracy. The results of this study suggest that most dried cheese is produced in bite-size pieces. It was also suggested that each Mongolian nomadic household produces dried cheese with the same degree of accuracy. These results indicated that the portion size of dried cheese in each household can be estimated by measuring the weight of a certain number of pieces in each household. |
