The selected samples are ethanol extracts from grains, vegetables, fruits and herbs. The Ames test and novel antimutagenic test using phase II conjugation enzyme (sulfotransferase) were used to determine the antimutagenic activities. Stalk of sweet potato, soybean, burdock, pericarp of mango and labiate herb had strong antimutagenic activities. While, when sulfate conjugation method is Ames test. The antimutagenic activity of the food was able to be widely detected by using two
